gone strawberry pickin'....

{image by me}

hello!

sorry for being MIA the last little bit, but i've been working on a few projects and relaxing before baby girl arrives [only two weeks left... or less!]

but, if you are local, or not, you might want to check out my latest post over on the cafe zupas blog on some local strawberry picking!

there's nothing like picking your own produce and eating fresh sweet strawberries right off the vine! there isn't much time left in the u-pick strawberry season, so head over here to check out the details before all the strawberries are gone..

i'm a big salad eater. especially in the summer, i eat salads for lunch and dinner.

my current favorite salad is something with mixed greens, a cheese, a fruit, and a nut..

you can check out my latest post over at the zupas blog for my favorite balsamic vinaigrette recipe.. it's super tasty and super easy to make!

corn on the cob...

It’s isn’t too much longer that corn on the cob will be in full season around these parts.    in fact, i’ve already seen some decent prices on corn at my local market.
instead of using the same old boring butter, salt, and pepper with your corn.  why not try something new?
here’s a great recipe for corn on the cob with shallot-thyme butter.   the flavor combined with some fresh sweet corn will blow your socks off!!
read more for recipe…
{corn on the cob with shallot-thyme butter}recipe found here
8 tablespoons [1 stick butter], room temperature
2/3 cup chopped shallots [3 oz]
2 tablespoons chopped fresh thyme or 2 tsp dried [i really recommend fresh]
6-9 ears of corn, shucked – boiled or grilled. to grill brush with olive oil and cook 10 min. away from direct heat. move around a lot.
directions
melt 2 tbsp butter in heavy small skillet over medium heat
add shallots and saute until brown, about 4-7 minutes
cool
combine remaining 6 tbsp butter and thyme in small bowl
add shallot mixture and blend well.
season to taste with salt and pepper
serve with corn.
